On a recent visit to Trader Joe’s, I discovered pre-made frozen falafel. Of course nothing beats freshly made falafel, however I knew this would be great for a quick weeknight meal. I decided to include them in a to kale salad with tahini dressing.
For the kale I used Lacinato, also called Dino kale. De-stem and cut into thin ribbons.
sliced black olives
For the tahini dressing.
1/4 cup tahini
3 roasted garlic cloves, minced
juice of one lemon
1 tbsp water
pepper to taste
Mix together the ingredients with the dressing. Let the salad rest in the refrigerator for a few minutes to allow the kale to soften.
I think this was a good use for the falafel. Since there is no Trader Joe’s nearby I may use chickpeas next time.
